Acai Blueberry Muffins with Rice Flour

Instead of a steamer, this recipe can be made in mugs using a microwave. Cook until the middle part is done, about 1 minute and 45 seconds per cup.

Ingredients

½ cup (120ml) | acai or blueberry juice (100%) |

⅔ cup (100g) | rice flour |

Directions
Boil water in a steamer.
In a bowl, mix eggs and sugar. Add acai juice.
In another bowl, combine rice flour and baking powder. Mix into the wet ingredients.
Pour the batter into individual cups. Fill up to 2/3 of the way to leave enough room to expand.
Steam for 20-25 minutes.
When the cupcakes cool down, garnish with whipped cream, blueberries, and mint leaves. Serve.
