Acai Blueberry Muffins with Rice Flour

These muffins are made with rice flour and acai or blueberry juice, and steamed. Enjoy the health benefits of acai and blueberries. Make sure to bring the steamer to a boil before placing the cups in it.

Tips:
  • This is an easy, fool-proof rice flour muffin recipe using a steamer. As an option, add mashed bananas to keep the muffins extra moist.

  • Instead of a steamer, this recipe can be made in mugs using a microwave. Cook until the middle part is done, about 1 minute and 45 seconds per cup.

  • All rice flour is naturally gluten-free. Make this dish completely gluten-free by using gluten-free substitutes for other ingredients as needed.

Ingredients

2 eggs

3 tablespoons (40g) sugar

½ cup (120ml) acai or blueberry juice (100%)

⅔ cup (100g) rice flour

1 teaspoon (4g) baking powder

For garnish

Blueberries

Fresh mint leaves

Whipped cream

Directions

  1. Boil water in a steamer.

  2. In a bowl, mix eggs and sugar. Add acai juice.

  3. In another bowl, combine rice flour and baking powder. Mix into the wet ingredients.

  4. Pour the batter into individual cups. Fill up to 2/3 of the way to leave enough room to expand.

  5. Steam for 20-25 minutes.

  6. When the cupcakes cool down, garnish with whipped cream, blueberries, and mint leaves. Serve.
