Apple Cream Cheese Fritters with Rice Flour

The mixture of rice flour and egg whites in the batter creates pleasantly light texture. Filled with apples and cream cheese, this is a pleasant snack or dessert. Serve with a smooth custard sauce made with rice flour.

Tips:

Ingredients

2 (400g) apples

For the filling

½ cup (120g) cream cheese, softened at room temperature
Rice flour for dusting

For the batter

1½ tablespoons (16g) sugar
Pinch of salt

For the custard sauce

Additional vegetable oil for deep frying

¾ cup (140g) rice flour
Fruit sauce for garnish

⅔ teaspoon (3g) baking powder

6 cups (1,400ml) water

1 tablespoon (18ml) vegetable oil

3 (140g) egg whites

3 (60g) egg yolks

1 cup (160g) milk

3 tablespoons (30g) vanilla extract

1⅔ cups (400ml)

1 teaspoon (4ml)

Directions

  1. Peel and cut the apples into 1/8 inch (5mm) thick slices.

  2. For the custard sauce

    Stir the cream cheese and sugar until soft. Spoon in the cream cheese in between apple slices. Dust with rice flour.

  3. In a bowl, combine rice flour, baking powder and water. Add vegetable oil and mix well. In another bowl, beat egg whites with a pinch of salt until stiff peaks form. Fold into the batter in 3 portions.

  4. Coat the apple sandwiches with the batter and deep fry in 320°F (160°C) oil. Set aside.

  5. In a bowl, combine egg yolks, sugar, and rice flour. Mix until well combined.

  6. In a saucepan, heat the milk almost to the point of boiling. Remove from the heat. Slowly whisk the milk into the custard sauce. Add vanilla extract. Return to the saucepan over low heat and simmer until creamy.

  7. Pour the custard sauce onto a plate. Place apple fritters and decorate with fruit sauce. Serve.
