Buckwheat and Rice Flour Dumpling Vegetable Soup

This is a delicious chunky miso soup with seasonal vegetables and dumplings made of rice flour and buckwheat flour. Enjoy this well-balanced hearty soup!

Tips:
  • Rice flour alone can make delicious dumplings. When mixed with finely grated Chinese yams or tofu, they will be more moist and fluffy.

  • Miso, Japanese mushrooms, and dashi powder can be purchased online or at Asian grocery stores.

Ingredients

For the dumplings

¼ cup (40g) rice flour

⅓ cup (40g) buckwheat flour

3-3½ tablespoons (40-50ml) water

For the soup

¼ cup (5g) kikurage dried wood ear mushrooms

1 cup (100g) enoki mushrooms

1 cup (80g) shiitake mushrooms

1 (100g) Japanese eggplant (about 1 cup)

1 (80g) carrot (about ½ cup)

2½-3⅓ cups (600-800ml) water

1 teaspoon (4g) dashi powder

1½ tablespoons (30g) miso

Directions

  1. For the dumplings

    In a bowl, combine rice flour, buckwheat flour, and water. Knead until the dough achieves the firmness of an earlobe.

  2. Form small bite size balls, about 1 inch (2-3cm) in diameter. Set aside.

  3. For the soup

    Soak the dried mushrooms in water to rehydrate. Cut all the ingredients into 1 inch (2-3 cm) pieces.

  4. In a pot over medium high heat, combine water, mushrooms, eggplants, carrots, and dashi powder. Bring to a boil then simmer.

  5. When cooked thoroughly, add dumplings. Continue to simmer until the dumplings start to float.

  6. Add miso to the soup. Serve.
