Cold Rice Noodle Salad with Seafood

These rice flour noodles are cooked on a skillet like crepes and cut into strips. The soy sauce and vinegar dressing is refreshing and delicious.

Tips:
  • Rice flour’s mild flavor makes it a kitchen essential. It works well with a variety of ingredients and various cuisines.

Ingredients

For the noodles

1 cup (160g) rice flour

¼ cup (40g) black sesame

1⅔ tablespoons (20g) potato starch

1⅔ cups (400ml) water

Vegetable oil as needed

For the salad

2oz/60g lettuce, coarsely chopped (about 2 cups)

¼ (20g) English cucumbers, cut into slices (about ½ cup)

1½ tablespoons (20g) corn kernels

1.4oz/40g salmon, sashimi grade (see Tips)

1.4oz/40g squid, sashimi grade (see Tips)

For the dressing

4 tablespoons (60ml) vinegar

3 tablespoons (60ml) soy sauce

1½ teaspoons (6g) sugar

Sesame oil and seafood stock, as needed

Directions

  1. For the noodles

    In a bowl, combine rice flour, sesame, and potato starch. Gradually add water and mix well.

  2. Lightly coat a skillet with oil. Pour 1-2 ladleful of the batter. Swirl to spread evenly. Cook until the bottom is light brown. Flip and cook the other side.

  3. Cut into 1/8 inch (5mm) strips.

  4. For the dressing

    In a bowl, combine vinegar, soy sauce, and sugar. Add sesame oil and seafood stock as desired.

  5. Place noodles on individual plates, top with salad and seafood. Serve with dressing on the side.
