Cold Rice Noodle Salad with Seafood

These rice flour noodles are cooked on a skillet like crepes and cut into strips. The soy sauce and vinegar dressing is refreshing and delicious.

Ingredients
For the noodles

For the salad
2oz/60g | lettuce, coarsely chopped (about 2 cups) |

¼ (20g) | English cucumbers, cut into slices (about ½ cup) |

1½ tablespoons (20g) | corn kernels |

1.4oz/40g | salmon, sashimi grade (see Tips) |

For the dressing
4 tablespoons (60ml) | vinegar |

3 tablespoons (60ml) | soy sauce |

1½ teaspoons (6g) | sugar |

Sesame oil and seafood stock, as needed |
Directions
For the noodles
In a bowl, combine rice flour, sesame, and potato starch. Gradually add water and mix well.
Lightly coat a skillet with oil. Pour 1-2 ladleful of the batter. Swirl to spread evenly. Cook until the bottom is light brown. Flip and cook the other side.
Cut into 1/8 inch (5mm) strips.
For the dressing
In a bowl, combine vinegar, soy sauce, and sugar. Add sesame oil and seafood stock as desired.
Place noodles on individual plates, top with salad and seafood. Serve with dressing on the side.
