Creamy Takoyaki with Rice Flour

Do you have a Takoyaki Maker or a takoyaki grill pan at home? If so, this recipe makes creamy and slightly chewy takoyaki. The batter is easy to make because rice flour does not become lumpy when mixed with broth. Known as the quintessential street food in Japan, you can now make takoyaki octopus-balls at home!

Tips:
  • It is very easy to make takoyaki with rice flour. It holds more moisture and mochi-like texture than the ones made with wheat flour.

  • Japanese dashi powder, condiments, and other toppings can be purchased online or at Asian grocery stores.

  • All rice flour is naturally gluten-free. Make this dish completely gluten-free by using gluten-free substitutes for other ingredients as needed.

Ingredients

For the batter

1 tablespoon (9g) Japanese dashi powder

2 cups (500ml) water

1 cup(150g) rice flour

2 eggs, beaten

2 teaspoons (12ml) soy sauce

1 teaspoon (6g) salt

Vegetable oil as needed

For the filling

5.3oz/150g cooked octopus

2 tablespoons (10g) green onions or scallions

1 tablespoon (20g) red pickled ginger

⅓ cup (20g) tempura bits

For the topping

Use any of the following as needed:

Takoyaki sauce or Worcestershire sauce

Japanese mayonnaise

Dried green seaweed flakes, or regular dried seaweed

Dried bonito flakes

Directions

  1. For the batter

    In a medium bowl, combine Japanese dashi powder with water.

  2. Mix rice flour into the dashi, then add eggs, soy sauce, and salt.

  3. For the filling

    Chop octopus, green onions, and red pickled ginger.

  4. Turn on the Takoyaki Maker, coat lightly with oil.

  5. Pour the batter, then the fillings. Turn frequently and cook until golden brown.

  6. Plate the takoyaki, top with sauce, mayonnaise, seaweed, and bonito flakes. Serve immediately.
