Crispy Pizza with Rice Flour Crust

Anyone can make this pizza easily and enjoy it with friends and family. Crispy crust and cheese are baked to perfection, a touch of extra cheese added during the baking process makes it a harmonious meal for all!

Tips:
  • Add hot water when mixing rice flour, so that the dough forms better.

Ingredients

For the dough

2 cups (320g) rice flour

½ cup (40g) almond flour

1 teaspoon (6g) salt

2 teaspoons (8g) baking powder

2 tablespoons (24ml) olive oil

1 cup (260ml) hot water

For the toppings

¼ cup (60g) pizza sauce

½ (70g) green pepper, chopped (about ½ cup)

2 (240g) tomatoes, diced (about 1 cup)

½ (70g) onion, diced (about ½ cup)

3.5oz/100g Eryngii king oyster or other mushrooms, sliced (about 1 cup)

5.3oz/150g sausage, cooked

1¼ cups (140g) cheese

½ cup (60g) cheese, to be added later

Directions

  1. In a medium bowl, add all the ingredients for the dough and mix with a wooden spatula.

  2. Form the dough into a ball. Place it in between a folded parchment paper. Flatten it into a circle.

  3. Preheat the oven to 430°F (220°C). Remove the top sheet of parchment paper. Spread the tomato sauce over the dough, then sprinkle with the cheese and other desired toppings. Bake in the oven for 10 minutes.

  4. Sprinkle with additional cheese on top, and bake for another 10 minutes, or until the cheese turns golden brown. Serve immediately.
