Crunchy Granola with Rice Flour

Crunchy toasted rice becomes flakey when baked with rice flour. Toasted rice is one of the traditional non-perishable foods famous in Kumamoto, Japan. It can be served with milk or mixed in with ice cream. Instead of toasted rice, rice-based cereals can be used.

Tips:
  • Dusting toasted rice and rice-based cereals with rice flour evens the water evaporation during the baking process, preventing them from hardening.

  • All rice flour is naturally gluten-free. Make this dish completely gluten-free by using gluten-free substitutes for other ingredients as needed.

Ingredients

7oz/200g toasted rice or rice-based cereals (mixture of 2-3 kinds, total of about 6 cups)

½ cup (80g) rice flour

½ cup (40g) shaved or shredded coconut

3 tablespoons (20g) pecans

3 tablespoons (20g) almond slices

2 tablespoons (30g) cane sugar

1½ tablespoons (30g) honey

2 tablespoons (30g) yuzu or other fruit jam

2 tablespoons (30ml) canola oil

2 tablespoons (30ml) water

½ cup (80g) dried fruit mix

1½ tablespoons (10g) pumpkin seeds

Directions

  1. Preheat the oven to 320-340°F (160-170°C).

  2. In a large bowl, mix toasted rice, rice flour, coconuts, pecans, and almonds.

  3. In a medium saucepan, cook sugar, honey, jam, canola oil, and water.

  4. Pour the sauce over the rice mixture and blend well. Spread over lined cookie sheets. Bake for 30 minutes, stirring several times with a wooden spatula while cooking. Take out from the oven when the mixture is golden brown and crunchy.

  5. When cool, mix with dried fruit mix and pumpkin seeds. Serve with milk.
