Egg-Free Sweet Potato Crème Brulee with Rice Flour

This dessert uses rice flour in place of eggs to make it creamy and sweet potato for extra flavor.

Tips:
  • Rice flour is an excellent ingredient to make sauce and soup creamy. Béchamel sauce with rice flour is healthier than the traditional one, and it is easy to make. When using rice flour for cakes and other desserts, it brings out the moist, smooth texture of the dish.

Ingredients

1 (180g) sweet potato (about 1 cup prepared)

¾ cup (200ml) milk

¼ cup (60ml) water

½ cup (80g) sugar

2½ tablespoons (26g) rice flour

1¾ cups (400ml) heavy cream

Sugar for browning

Powdered sugar for garnish

Directions

  1. Peel the potato and cut into 1/8 inch (5mm) thick slices.

  2. Transfer to a large microwave-safe bowl. Add milk, cover with plastic wrap, and microwave for 2 minutes. Stir, and microwave for another 2 minutes. In a small bowl, combine water and sugar. Pour over the potatoes and cook in the microwave for additional 1 minute.

  3. In another bowl, combine rice flour and heavy cream with a hand blender. Add the potato mixture and mix well.

  4. Transfer to a saucepan. Simmer over low heat until creamy.

  5. Using a sieve, strain the liquid, and pour into individual ramekins.

  6. Flatten the surface and chill in the refrigerator.

  7. Take the ramekins out of the refrigerator and spread the first coat of sugar evenly on top. Using a torch, melt the sugar until golden brown. Spread the second coat of sugar. Brown until crispy.

  8. When completely cooled down, decorate with powdered sugar. Serve.
