Fruity Marshmallow Frozen Treats with Rice Flour
This is a frozen dessert made with rice flour and heavy cream. Make it several days in advance to let the flavors and texture blend together.

Freeze for 5-6 hours in a loaf pan and cut into slices or freeze overnight in popsicle molds. Alternatively, stir every hour or two to make shaved ice cream.

Ingredients
¼ cup (40g) | rice flour |

2½ tablespoons (30g) | sugar |

1 (11oz/312g) can | mandarin oranges, syrup and oranges separated (about ½ cup each) |

2 tablespoons (30g) | canned cherries |

1⅔ cups (80g) | marshmallows, cut into bite size pieces |

¾ cup (200ml) | heavy cream |

1 tablespoon (15ml) | rum, other liquors, or 1 teaspoon vanilla extract (optional) |

Directions
In a heavy saucepan, combine rice flour, sugar, and syrup from canned mandarin oranges.
Bring to a boil over medium high heat. Stir constantly. When creamy, set aside to cool.
When cool, add oranges, cherries, and marshmallows. Mix well.
In a bowl, beat heavy cream until stiff peaks form. Fold into the fruit mixture and add rum (optional). Pour into a loaf pan or popsicle molds.

Cut into slices if needed and serve.
