Green Tea Savory Crepes with Rice Flour

April 4th is said to be “Rice Flour Day,” which coincides with “Happiness Day” in Japan. This recipe is created in observance of these occasions. This recipe can be adapted into a dessert dish easily.

Tips:
  • Non-dairy options: Substitute milk with the same amount of soy, almond, or oat milk.

  • Matcha green tea powder is available online or at Asian grocery stores. Alternatively, consider substituting with pesto or finely chopped spinach.

  • All rice flour is naturally gluten-free. Make this dish completely gluten-free by using gluten-free substitutes for other ingredients as needed.

For the toppings

2 eggs

4 sausage links

Fresh Basil as garnish

For the filling

1 tablespoon (12g) rice flour

¾ cup (200ml) water

1¾ tablespoons (24ml) olive oil

½ teaspoon (2.5g) garlic

½ (70g) onion, finely diced (about ½ cup)

½ (15oz/411g) can diced tomato (about 1 cup)

2 teaspoons (9g) sugar

¾ teaspoon (4.5g) chicken bouillon

Dried oregano to taste

Salt and pepper to taste

For the batter

2 eggs

¼ teaspoon (1.5g) salt

1 cup (160g) rice flour

1 tablespoon (6g) matcha green tea powder

1⅔ cups (400ml) milk

Vegetable oil as needed

Directions

  1. Preparation for the toppings

    Make 2 sheets of paper-thin omelets, just like crepes. Using a mold, cut the omelets into heart shapes. Slice and sauté the sausage links. Wash basil leaves. Set them aside.

  2. For the filling

    In a bowl, combine rice flour and water to make a slurry. Set aside. In a skillet, add olive oil and cook garlic until fragrant. Add onions and sauté until translucent, then mix in the tomato, sugar, and chicken bouillon. Season with oregano, salt, and pepper. Add the slurry and simmer for 5 minutes. Set aside.

  3. For the batter

    In a medium bowl, mix eggs and salt. Add rice flour, matcha green tea powder, and milk. Gently combine.

  4. Coat a skillet or griddle with oil over medium high heat. When heated, place the skillet over a wet towel on a flat surface. Pour in approximately 1/4 cup batter. Swirl to coat the surface evenly. Cook over medium heat.

  5. When the center is cooked and dry, spoon the filling in the middle. When corners are turning golden brown, fold in the sides to make a square. Transfer to a plate. Garnish with toppings. Repeat and serve immediately.
