Linzer Shortbread Jam Cookies with Rice Flour

Linzer Augen are Austrian shortbread sandwich cookies filled with jam. This rice flour version is very easy to make. Simply combine dry ingredients before adding butter and eggs.

Tips:

Ingredients

1 cup (150g) rice flour

½ cup (50g) powdered sugar

¼ teaspoon (0.7g) ground cinnamon

Pinch of ground cloves and ground ginger

½ cup (100g) butter, diced

1 egg for the dough

2 egg yolks for the egg wash

2 tablespoons (30ml) heavy cream

2 teaspoons (10ml) water

Sunflower seeds for decoration

1 cup (240g) fruit jam

Directions

  1. In a bowl, sift together rice flour, powdered sugar, cinnamon, cloves, and ginger. Add butter. When crumbly, add the egg. Form a ball, and chill in the refrigerator for 15 minutes.

  2. Preheat the oven to 350°F (180°C).

  3. Roll out the dough into a 1/8 inch (3mm) thick sheet. Cut out cookies using cookie cutters (flower, heart, etc.). Using a smaller cookie cutter, cut out the center of the half of the cookies.

  4. In a small bowl, combine egg yolks, heavy cream and water. Egg wash the top of the cookies with holes. Decorate with sunflower seeds.

  5. Place all cookie pieces on lined baking sheets. Bake for 11 minutes.

  6. Heat the jam in a microwave for 10 seconds. Spread a thin layer of the jam over the bottom cookies. Gently place the top cookies over the jam, facing the egg wash side up. Fill the holes with extra jam. Serve.
