Meyer Lemon Madeleines with Rice Flour

These rice flour madeleines are perfect for using Meyer lemons. Grand Marnier is suggested for this recipe, but the use of liquor is optional and can be easily replaced with vanilla extract.

Tips:
  • Rice flour is a perfect ingredient for making sweets. Since it does not form lumps, you can mix rice flour with other ingredients without sifting it first.

Ingredients

For the madeleines

2 (100g) eggs

⅓ cup (60g) sugar
Extra butter and rice flour for preparing the molds

For the chocolate sauce

2 teaspoons (10ml) Grand Marnier (optional) or vanilla extract

For the zest

½ cup (90g) Meyer lemon juice

1 teaspoon (4g) rice flour

½ cup (120g) baking powder

unsalted butter, melted

½ cup (80g)

2 tablespoons (30ml) white chocolate

3 tablespoons (20g) maple syrup

1⅓ tablespoons (20ml) Meyer lemon zest

Directions

  1. For the madeleines

    Preheat the oven to 390°F (200°C). Coat the molds lightly with butter and rice flour.

  2. Combine eggs, sugar, Grand Marnier, and lemon juice in a bowl.

  3. For the chocolate sauce

    Add rice flour, and baking powder, then melted butter. Mix well.

  4. For the lemon zest

    Pour the batter into the cake molds.

  5. Bake for 13 minutes.

  6. Melt white chocolate in a bowl over a simmering pot of water. Add lemon juice and syrup.

  7. In a saucepan, combine lemon zest and syrup. Simmer until the liquid has evaporated. Set aside.

  8. Pour the sauce over the madeleines and top with lemon zest. Serve.
