Meyer Lemon Madeleines with Rice Flour

These rice flour madeleines are perfect for using Meyer lemons. Grand Marnier is suggested for this recipe, but the use of liquor is optional and can be easily replaced with vanilla extract.

Tips:
  • Rice flour is a perfect ingredient for making sweets. Since it does not form lumps, you can mix rice flour with other ingredients without sifting it first.

Ingredients

For the madeleines

2 (100g) eggs

⅓ cup (60g) sugar

2 teaspoons (10ml) Grand Marnier (optional) or vanilla extract

2 teaspoons (10ml) Meyer lemon juice

½ cup (90g) rice flour

1 teaspoon (4g) baking powder

½ cup (120g) unsalted butter, melted

Extra butter and rice flour for preparing the molds

For the chocolate sauce

½ cup (80g) white chocolate

2 tablespoons (30ml) Meyer lemon juice

2 teaspoons (10ml) maple syrup

For the zest

3 tablespoons (20g) Meyer lemon zest

1⅓ tablespoons (20ml) maple syrup

Directions

  1. For the madeleines

    Preheat the oven to 390°F (200°C). Coat the molds lightly with butter and rice flour.

  2. Combine eggs, sugar, Grand Marnier, and lemon juice in a bowl.

  3. Add rice flour, and baking powder, then melted butter. Mix well.

  4. Pour the batter into the cake molds.

  5. Bake for 13 minutes.

  6. For the chocolate sauce

    Melt white chocolate in a bowl over a simmering pot of water. Add lemon juice and syrup.

  7. For the lemon zest

    In a saucepan, combine lemon zest and syrup. Simmer until the liquid has evaporated. Set aside.

  8. Pour the sauce over the madeleines and top with lemon zest. Serve.
