Rice Flour Udon Noodle Soup with Pork

Tips:
  • Rice flour binds better when kneading with potato or corn starch. Hot water also enhances the binding process.

Ingredients

For the noodles

1¼ cups (200g) rice flour

½ cup (100g) potato starch

¾ teaspoon (4.5g) salt

⅔ - ¾ cup (160-200ml) hot water

For the broth

6 cups (1,400ml) Chinese broth or chicken broth

3 tablespoons (60ml) soy sauce

1 tablespoon (15ml) sesame oil

For the pork

14oz/400g pork belly, thinly sliced

2 tablespoons (20g) rice flour

Salt and pepper to taste

For the topping

½ cup green onions, chopped

3oz/80g Naruto fish cake

3oz/90g Menma seasoned bamboo shoots

2 boiled eggs, cut in halves

Directions

  1. For the noodles

    Bring water into a boil in a large pot.

  2. Mix rice flour, potato starch, and salt in a bowl. Add hot water slowly and knead until achieving the desired firmness.

  3. Rest in the refrigerator for approximately 5 minutes.

  4. Using a rolling pin, flatten the dough into a 1/4 inch-thick (5mm) sheet, and slice it into 1/4 inch (5mm) wide strips.

  5. Boil in the large pot for approximately 5 minutes. Drain and set aside.

  6. For the broth

    In the pot, heat the broth and soy sauce. When it boils, turn off and pour in the sesame oil.

  7. For the pork

    Sprinkle the meat with salt and pepper, then coat with rice flour. In a skillet over high heat, add oil and sauté the meat. Cut into approximately 1 inch (3cm) pieces.

  8. Pour the broth into individual bowls, then add the noodles and toppings. Serve immediately.
