Sweet Potato and Apple Bread with Rice Flour

All you need to make this simple pound cake is one bowl to mix all the ingredients. Enjoy baking it in a loaf pan, muffin cups, or a Bundt pan!

Directions
Preheat the oven to 340-350°F (170-180°C).
For the apple and the potato
Peel and cut into quarter-round slices.
For the batter
In a bowl, combine eggs, sugar, and vegetable oil. Add rice flour, baking powder, and salt.
Add the apple and potato slices into the batter. Add vanilla extract. Pour the batter into the greased loaf pan.
Bake for 45-50 minutes, or until a skewer inserted comes out clean. Serve when cool.
