Pork Samosas with Rice Flour

These crispy, delicious samosas are made with rice flour. Stuffed with ground pork curry, this recipe can easily be adapted into a vegetarian dish.

Tips:
  • When making noodles, dough, or dumpling wrappers with rice flour, use hot water to knead in order to encourage the binding process. Since heat helps its process, boiling, frying, or steaming will work well with any food made with rice flour.

  • All rice flour is naturally gluten-free. Make this dish completely gluten-free by using gluten-free substitutes for other ingredients as needed.

Ingredients

For the dough

1¼ cups (200g) rice flour

⅓ cup (60g) potato starch

⅔-¾ cup (160-200ml) hot water

For the filling

1 (260g) large onion, minced (about 1⅔ cups)

2-3 (160g) carrots, minced (about 1⅓ cups)

9oz/260g ground pork

1⅔ (260g) potatoes, diced (about 1⅔ cups)

⅓ (40g) bell pepper, diced (about ⅓ cup)

½ cup (140ml) water

2 tablespoons (12g) curry powder

Salt and pepper to taste

1½ tablespoons (15g) rice flour

1½ tablespoons (22ml) water

Leaf lettuce and tomatoes to serve on side.

Directions

  1. For the dough

    In a bowl, combine rice flour and potato starch. Slowly add hot water and knead. Adjust the amount of liquid to reach a desired firmness. Form a ball and set aside.

  2. For the filling

    Heat oil in a skillet. Sauté the onion, carrots, ground pork, potatoes, and bell pepper. When cooked, add water and season with curry powder, salt and pepper. Simmer until most of the liquid has evaporated.

  3. In a small bowl, make a slurry by mixing rice flour and water. Add to the curry. When the curry thickens, turn off the heat. Set aside to cool.

  4. For the wrapping

    Divide the dough in ten equal portions. Stretch each piece to make thin circles, approximately 5 inches (13cm) in diameter.

  5. Spoon the curry in the center. Fold in half and pinch the edges to seal tightly.

  6. Deep-fry the samosas in 350°F (180°C) oil until golden brown. Serve with lettuce and tomatoes on the side.
