Pork Wrapped Mochi with Cheese

Mochi can be made simply by mixing rice flour and finely grated daikon radish, and cooked in mere 6 minutes in the microwave! Mochi is then wrapped with meat and served with two kinds of sauces. The pork and daikon mochi complement each other very well.

Tips:
  • Grated daikon radish added to rice flour adds to the long lasting softness and moisture of the mochi.

  • All rice flour is naturally gluten-free. Make this dish completely gluten-free by using gluten-free substitutes for other ingredients as needed.

  • Japanese ingredients such as dashi, mirin, and shiso can be purchased online or at Asian grocery stores.

Ingredients

For the mochi

10oz/280g daikon radish, finely grated (about 1⅓ cups)

1¼ cups (200g) rice flour

1 teaspoon (3g) Japanese or Chinese dashi powder

Salt and pepper to taste

14oz/400g pork belly, thinly sliced for shabu-shabu (about 16 slices)

½ cup (10g) shiso green perilla leaves or basil

½ cup (2oz/56g) cheese

½ cup (1.8oz/50g) green onions, chopped

Vegetable oil as needed

For the cherry sauce

¼ cup (80g) cherry preserves

½ teaspoon (3ml) balsamic vinegar

Salt and pepper to taste

For the garlic sauce

½ teaspoon (3g) garlic, minced

2½ tablespoons (48ml) soy sauce

2⅓ tablespoons (36ml) mirin

1½ teaspoons (6g) sugar

1½ teaspoons (8ml) chili oil

1 tablespoon (6g) green onions, minced

Directions

  1. For the mochi

    In a microwave-safe bowl, combine the daikon, rice flour, dashi powder, and salt and pepper. Cover with plastic wrap, and cook in the microwave for 4 minutes. Flip the mochi, and cook for additional 2 minutes.

  2. Cut the mochi into 16 sticks.

  3. On one end of the pork slice, place desired fillings (shiso/basil, cheese, or green onions) and mochi. Wrap tightly. Hold the edges with tooth picks. Set aside.

  4. For the cherry sauce

    In a saucepan over medium high heat, combine cherry preserves, balsamic vinegar, salt and pepper. Bring to a simmer. Transfer to a serving bowl.

  5. For the garlic sauce

    In another sauce pan over medium high heat, combine garlic, soy sauce, mirin, sugar, and chili oil. Add green onions. When heated thoroughly, turn off the heat. Transfer to another serving bowl.

  6. Heat the oil in a skillet and sauté the mochi wraps. When cooked thoroughly, serve with two sauces on the side.

  • This recipe uses US customary units. Measurement equivalents include: 1 teaspoon = 5ml, 1 tablespoon = 15ml, and 1 US cup = 237ml or 8fl oz. (1 metric cup = 250ml or 8.5fl oz.)
