Potato Pancakes with Apple Carrot Sauce

Potatoes and carrots are thinly julienned to make it easy to cut apart and to improve the texture. Add the rice flour gradually into the beaten eggs to keep the batter from getting lumpy. Enjoy these pancakes with a refreshing sauce!

Ingredients

For the batter

2 eggs

½ cup (90g) rice flour

1¾ cups (240g) potatoes, thinly julienned (about 1⅔ cups)

2 (100g) carrots, thinly julienned (about 1 cup)

1 cup (100g) cheese

½ tablespoon (2g) parsley, chopped

¼ cup (60ml) vegetable oil for pan frying

For the sauce

2oz/60g daikon radish, finely grated (about ½ cup)

1 (60g) carrots, finely grated (about ½ cup)

¼ cup (60ml) apple juice

¼ cup (60ml) vegetable oil

2 tablespoons (30ml) apple cider vinegar

Salt and pepper to taste

Directions

  1. For the batter

    Combine eggs and rice flour in a bowl. Add potatoes, carrots, cheese, and parsley. Mix well.

  2. For the sauce

    Mix finely grated daikon and carrots in a bowl. Using a whisk, add apple juice, vegetable oil, and apple vinegar. Season with salt and pepper. Set aside.

  3. Heat the oil in a heavy skillet over medium heat. When hot, spoon in several 1/4 cup scoops of batter and flatten them. When bubbles appear on the surface, flip over. Cook about 5 minutes each side or until golden brown. Drain excess oil on a plate lined with paper towels. Serve with sauce on the side.
